Songs by Francisco Tarrega are awesome. He was a Spanish Pianist, although his pieces are played A LOT by guitarists, and his songs are perhaps the most well known Spanish music played by classical guitarists. I love his song's; "Capricho Arabe", "Lagrima" and "Adelita"
For tabs, check out http://www.classtab.org - It's the best website I have ever found for classical guitar tabs. U.G sucks for classical guitar tabs.
There is also the famous and well known spanish guitar piece called "Spanish Romance" aka "Romance De Armor". Here is a video of it played by Xuefei Yang: http://youtube.com/watch?v=swB7Zi-A74w and you can find the tabs for this at the tab website mentioned above.
Also check out songs by Isaac Albeniz on that classtab website. He has some great spanish songs to learn as well. I'm currently learning the song "Serenata Arabe" which he composed.
If you are wanting to get into more Flamenco kind of Spanish guitar playing check out: Paco De Lucia, and Los Lobos, but this kind of music is really technically challenging and not easy to play if you haven't been playing Flamenco music for years already.
