The case Grand Upright v. Warner showed that sampling WITHOUT permission is considered copyright infringement. However, I believe that sampling, even WITH permission, is copyright infringement, as the material is not completely original as YouTube requires in order for it to avoid attaching a notice that reads as follows:
"NOTICE: This video contains audio material not authorized by (copyright holder's name). The audio has been disabled."

Also, I don't get it when Sound Choice uses the preposition "by" with the noun "permission" to indicate they have made their karaoke version of a song WITH the permission of the original record label. In other words, where it reads "Used BY permission" it should be changed (I mean, reworded) to "Used WITH permission".

There is a right way to use other peoples material in your mix or to record cover songs and that is to contact the Harry Fox Agency and get the proper license. I'm not familiar with the case you mentioned but, undoubtably that was not doone or the case would never have been prosecuted to begin with. YouTube has there rules but, they do not necessarily coincide with copyright law. For instance, Megan Nicole and Tyler Ward have many YouTube videos whch are cover songs and many of those recordings are actually being sold at iTunes. So, there is a way to legally do it. I believe that Tyler Ward and Megan Nicole have taken the proper steps to insure that the original artists are given full credit for their work and that is the important point. Just get used to see stuff that makes very little sense everywhere you look and the world will be easier to live.

Grammatically.. most Americans can't even distinguish between plural S and possessive S so I have ceased to be surprised 6 months after I have learned English.. you do the same and it'll be alright.
